A little while ago we got to attend a fabulous macaron amking workshop at the 15 On Orange hotel, it was such fun and I truly can't get enough for the crispy and chocolatey morsels.

Rather than make you envious, I thought I would share the recipe so you too can make some yourself...


210g Egg Whites (free of grease and/or any egg yolks)
250g Sugar ( not castor sugar as this contains corn flour)
250g Ground Almonds (which need to be sifted prior to weighing)
250g Icing Sugar, sifted
Food coloring to taste (bare in mind the lighter the colour, it may brown when baking)

Heat the oven to 120'c
Line your baking tray with a Silpad  or silicon baking paper
Sift your ground almonds three times
Sift the icing sugar
Whisk the egg white until stiff
Add the sugar , one spoon at a time whilst whisking continuously scrape the side of the bowl In between.
Remember to whip until all the sugar grains have dissolved, it may take a little longer but it's worth it.
Pipe your circles onto the tray leaving a 2.5cm space between each one
Tap the tray against the counter to get rid of air bubbles and leave to stand for 1 hour ( a skin will form when you touch it)
Bake for 15 minutes, until Macarons can easily be removed from Silpad without leaving any batter behind.
Lift the Macarons and fill as desired.

Ingredients  - Ganache filling:
200g cream
200g dark chocolate

Chop dark chocolate roughly and microwave until just melted (approx 2 mins)
Bring the cream to the boil and then leave to cool slightly
Pour 1/3 of the hot cream into the chocolate and mix in well
Add another 1/3 and repeat
Lastly add the final 1/3 and mix until a smooth and shiny ganache is achieved
Place clingwrap over the ganache, resting the film directly on the surface of the ganache to prevent a skin from forming

Fill your Macarons and munch away!
