The other day I was attending a bring and share event and had to think of quick and easy hot finger foods to make in less than an hour.

I always have a roll of frozen Puff Pastry and I always have eggs and so I decided on making the following..

Caramelized Onion and Butternut Squash Tartlets and Egg Souffle Cups with Pan Roasted Tomatoes and Spring Onion

Caramelized Onion and Butternut Squash Tartlets

You will need:
2 large onions (cut into fine rings)
1 Butternut Squash Pre-cooked and cut into squares
1/2 tsp Robertsons Cinnamon ( or any other)
1/2 tsp Aromat Cheese Salt ( any savoury spice mix)
2 Tbsp Sugar
2 Tbsp Olive Oil
1/2 Roll Today's Puff Pastry (or any other)
Roasted Sunflower Seeds to sprinkle

Method:
Turn Oven onto 180'c

In a pan ,heat oil and braise onions until they appear almost see through , clear in colour.
Add the cinnamon , salt and sugar and continue to saute(brown) as this caramelises , add a tiny amount of water if necessary. Lastly add the chopped Butternut squash and turn over into the onions , DO NOT STIR.
Leave to one side.
Take a shallow muffin pan and grease , cut the Puff Pastry into squares and push into muffin cups.
Spoon in the onion and butternut mix , sprinkle on sunflower seeds and bake FOR 15-17mins , keeping an eye on the onions that they do not burn.

Egg Souffle Cups with Pan Roasted Tomatoes and Spring Onion

You will Need:
3 Large Eggs
100ml full Cream Milk
1tsp Aromat Salt ( any savoury spice mix)
2 Spring Onions
10-15 Baby Tomatoes cut into halves
2 Tbsps Olive Oil

Method:
Heath oven to 180'c

Mix togther in a bowl the 3 eggs , the salt and the milk and beat well.
Grease a deep Muffin Pan.
Pour Egg Mixture into the Muffin Cups and bake for approximately 15-20mins , keeping an eye that they do not over cook. DO NOT OPEN OVEN WHEN COOKING, they will deflate and collapse.
Remove from oven and allow to cool for a few minutes.
Place onto serving plate.

In a pan heat the oil and add the tomatoes , gently roasting until soft ( but not collapsing) , add a sprinkle of cheese salt. Spoon over the souffles and decorate with cut spring onion rings.
